What is the difference between a 1 lb and a 2 lb loaf pan?

The difference is dough capacity. A 1-pound pan holds a small bread or quick bread; a 2-pound pan, around 9 by 5 inches, is the standard sandwich-loaf and pound-cake size most recipes call for. Bigger artisan loaves use large or Pullman pans. Pick the pan by the dough weight in the recipe.
